Elizabeth Raffald's The Experienced English Housekeeper is one of the books that I use most when cooking period recipes. This book and Hannah Glasse's The Art of Cookery (which I believe is also on google books) are my two main reference books for period cooking. I recommend them highly if you are interested in period cooking.
Elizabeth's Raffald's recipe for beet pancakes (I believe she calls them pink coloured pancakes) is a particular favorite of mine. They are surprisingly delicious. I use her recipe when I teach period cooking. Everyone immediately turns their noses up when beets are mentioned, but they always change their mind after tasting the pancakes. A period correct way to eat them is to spread apricot preserves on them, sprinkle confectioner's sugar on top and to roll them up. Or you can roll them up with green sweetmeats, which I think is pickled melon rind.

I actually posted Ms. Glasse's book along with the book written by the Prince Regent's personal Chef in the cooking section. I have so far only glanced at them, but already look wonderful.
