So this morning I started my cooking from scratch for a week challenge that i talked about in the other post. This morning it was all about Regency breakfast foods. First, I made butter. So simply it was amazing. Basically just put a pint and a half of heavy cream in my stand mixer and let it whip it until it broke the cream down into butter, had to drain it of liquid a few times, replacing the liquid with water until it was finally butter. Drained the liquid off one last time, then put the butter into the fridge for a couple hours to firm up. It was so amazingly rich and yummy. It is a good idea to take a spatula to the butter to really 'wash' it. All you have to do is spread the butter up against the side of your mixing bowl a few times until the very last drops of the milk are 'washed' from the butter. If you don't do this your butter may taste like sour milk after a while. You can also do this after the fact if the butter begins to taste a little sour.
