Just made my first ever Welsh Rarebit tonight using the recipe from Historical Foods: historicalfoods.com/1154/welsh-rarebit-recipe/It was really delicious. I did find it quite rich, and would have been more than full after eating only one slice of bread with toasted cheese (I made 2 from the center of a round of sourdough). The author isn't kidding about how easy it is to make, either -- from start to finish I think it took about 10 minutes, maybe less, and I had everything already around the kitchen. I finished mine under the broiler and it was nicely toasted. I love Patrick O'Brian's Aubrey-Maturin books, in which 'toasted cheese' is regularly (often greedily) devoured by the heroes. At last, I have tasted it for myself!
