What were the common colors and fabrics (or a modern equivalent) for breeches and vests during the Regency era? What should I look for in fabric for a frock coat? These will be evening wear. TIA

In my research I have found for breeches - wool doeskin for evening, or leather, cotton moleskin, linen, corduroy, cotton sateen, stockinette knit (like a heavy Jersey). Usually they are in light colors like tans and creams. Waistcoats are often silk for evening with linen backs. You could do all kinds of colors here. For breeches you could also use silk taffetta, and eventhough most of them are of light colours you can use a dark color as well (eg black tailcoat with black breeches and black silk stockings).
In the case of the tailcoat the fashionable evening colours would be black and midnight blue (chocolate brown, navy blue, bottle green and plum are more commonly used for daywear). And in case it was a summer evening ocassion you can have the tailcoat too made of linen.
In the case of the vest you can use many colours but try to avoid the new ones such as lemon green or the colours that apeared later in the 19th century such as vivid yellow, magenta, electric blue which are typically victorian. I suggest that for evening you wear a white silk vest this formula is less daring but always works!
...and NEVER forget that coloured cravats or stocks are only admited for daywear... black stocks more commonly used by military men not in service and white cravats with the correct knot properly done being much more fashionable.

Thank you so much for your help! I'm not sure about the waistcoat yet, but I'll probably be doing a cream breeches and black linen tailcoat. I'm assuming a cream linen fabric would be fine for evening wear for breeches?

The colors are right: I 'm not entirely sure about linen as evening wear, but given the climate in North Carolina, it seems entirely appropriate.
